Looks like you started taking temperatures at about 3PM and ended about
midnight... :-)



Yeah, yeah... I know that's not the case, but damn that's HOT! For
another perspective, when grilling a steak, 160 is medium-well. 130 is
rare...and delicious.

So just remember, when someone says 'It's a dry heat':
What is a Convection Oven?
Rather than let hot air circulate randomly, convection ovens carefully
create a uniform temperature with internal fans that circulate hot air.

So does the desert :-)
