Looks like you started taking temperatures at about 3PM and ended about midnight… J

 

Yeah, yeah… I know that’s not the case, but damn that’s HOT!  For another perspective, when grilling a steak, 160 is medium-well.  130 is rare…and delicious.

Rather than let hot air circulate randomly, convection ovens carefully create a uniform temperature with internal fans that circulate hot air.
