All you need to do is choose the new mapsets you wish to download to your Garmin unit within Mapsource, and it will wipe out what you currently have installed, and install the new mapset(s).  It would be the same if you were running multiple mapsets such as City Select and Topo, to be able to switch between.

It's pulled from the same information that generates the 24k topo, but
it looks to be a relatively new venture and is being honed as people
with specific skill-sets come into the mix. There are a number of
threads about it on the Groundspeak forums that I came across today
dealing with the building project that is...everything. Even if this
isn't as detailed at a true 24k topo map, it's SO much better than the
100k stuff Garmin puts out. Maybe it's a 1:25000 scale. :)

I have now downloaded AZ, UT, Wy, and CO. They are on their way into my
GPS now.

I put AZ in my ETrex Vista Cx already. Very cool. Very nice. Not quite
as detailed as a full 24k topo, but close. And, the price? Way too good.

Thanks Brian. I had been thinking of purchasing the topos anyways. This
lets me put that off.

It gets better. This is part of a much larger project, and I think is
the final piece that is pushing me to get back into school for a
GIS-related degree so I can do what is clearly interesting me the most.

Not too long ago I found out about some custom Garmin Topo maps for
MT/WY in detail far surpassing either Garmin Topo product, INCLUDING
Topo 2008. Recently, the guy creating these custom maps with public
data, published Topo maps for Arizona. I've tinkered with these maps
and...WOW. The level of detail is so much better, and land types (BLM,
NF, State Trust) are also integrated into the data. The best part?
These maps are FREE.

These look promising. Can't wait to try them out. Does one have to
delete the existing AZ from TOPO 2008 or does it just delete it
automatically? I am now using a Garmin Vista HCx.
